Roast Cauliflower with Butter

   Prep Time: 10 mins

   Cooking Time: 40 mins

   Serves: 2

 

Ingredients:

  • 1 x Medium Cauliflower
  • 2 tsp Olive Oil
  • 2 Tbsp Butter
  • 1 tsp Onion Granules
  • 1 tsp Garlic Granules
  • 1 tsp Dried Parsley
  • ½ tsp Paprika
  • 1 tsp Turmeric
  • 2 tsp Salt

  • Net Carbs: 10.5g
  • Protein: 6.2g
  • Fat: 21g

 

Preparation:

- Preheat the oven to 200c/180c fan/Gas Mark 6.
- Mix together the onion granules, garlic granules, parsley and paprika and set aside.
- Remove all the leaves and excess stalk from the cauliflower leaving the head whole.
- Add the salt and turmeric to a large pan of boiling water.
- Add the cauliflower and simmer gently for approx 8 minutes.
- Drain the cauliflower and transfer to an ovenproof dish.
- Brush the olive oil all over the cauliflower with a pastry brush.
- Sprinkle the spice mix all over the cauliflower.
- Transfer to the oven and roast for approx 25-30 minutes.
- Melt the butter towards the end of cooking.
- Slice the cauliflower into portions and serve with the melted butter.
