Tomato & Basil Soup Two Ways

   Prep Time: 5 mins

   Cooking Time: 40 mins

   Serves: 6

 

Ingredients:

  • 1kg Tomatoes (roughly chopped)
  • 3 Tbsp Olive Oil
  • 120g Red Onion (roughly chopped)
  • 1 Vegetable Stock Cube (made up to 1 pint with boiling water)
  • 1 tsp Salt
  • Handful Basil

 

Nutritional Values (per Serving):

  • Calories: 100 kcal
  • Net Carbs: 6.3g
  • Protein: 2g
  • Fat: 7.2g

 

Preparation (ONE):

- Preheat the oven to 200c/400f/Gas Mark 6
- Toss the tomatoes and onion in the olive oil and transfer to a baking sheet.
- Roast for 25 minutes.
- Whilst the tomatoes are cooking make up the stock.
- When the vegetables are ready, transfer to a large saucepan, add the stock and salt, bring to a boil then simmer gently for 10 minutes.
- Remove the saucepan from the heat, add the basil and blend until smooth using an immersion blender.

Ingredients:

  • 1kg Tomatoes (roughly chopped)
  • 3 Tbsp Olive Oil
  • 120g Red Onion (roughly chopped)
  • 1 Vegetable Stock Cube (made up to 400ml with boiling water)
  • 1 tsp Salt
  • Handful Basil
  • 200ml Double Cream

 

Nutritional Values (per Serving):

  • Calories: 241 kcal
  • Net Carbs: 7.3g
  • Protein: 2.6g
  • Fat: 22.2g

 

Preparation (TWO):

- Preheat the oven to 200c/400f/Gas Mark 6
- Toss the tomatoes and onion in the olive oil and transfer to a baking sheet.
- Roast for 25 minutes.
- Whilst the tomatoes are cooking make up the stock.
- When the vegetables are ready, transfer to a large saucepan, add the stock and salt, bring to a boil then simmer gently for 10 minutes.
- Remove the saucepan from the heat, add the basil and blend until smooth using an immersion blender.
- Pour in the cream and mix thoroughly using the blender.
- Return to the Heat and gently reheat for a few minutes.

 

**Tip; for a smoother soup, after blending you can push the soup through a sieve, then return back to the saucepan to reheat.
